Can I use lemon juice instead of lemons?
Real lemons are what gives this lemon tart that perfectly pure lemon taste. You could use store bought lemon juice, but I don’t recommend it.
What pastry is used for a tart?
Most tarts are made with a Pate Sablee crust also known as a shortbread crust. This crust is crisp and more cookie-like, unlike a flaky pie crust. I use my very delicious and easy shortbread crust for this recipe.

Does a lemon tart need to be refrigerated?
If you plan on eating the tart in a couple of days it can be covered and left out, but I prefer to store my in the fridge. If you like your tart room temperature, just let it sit out on the counter for several minutes before eating.
Why does my lemon tart crack?
Lemon tarts can crack when they lose moisture. This can happen from over baking. Make sure to take your tart from the oven when the center is still slightly jiggly.
How to Make a Lemon Tart
Step 1
After preparing and pre baking the shortbread crust, begin by mixing the eggs and sugar. Add the remaining ingredients and mix well.
Step 2
Pour the mixture into the prepared pie crust and bake for 35 minutes or until the lemon filling is set and not runny.
